Today is National Maple Syrup Day! We bet you didn’t even know it! 🙂
In celebration of this important day, try New Life Hiking Spa’s Healthy Oatmeal Pancakes. They have been a favorite of guests for decades and were even in the very first New Life Cookbook.
½ cup whole wheat flour
1 ½ cups rolled oats
1 ½ cups milk
2 tsp. molasses
3 tsp. baking powder
Mix flour, oats, baking powder in one bowl, and milk, egg whites, molasses in another. Pour the wet ingredients over the dry, stir until blended. Spray oil on a skillet or griddle, heat until quite hot. Ladle batter onto griddle, cook pancakes on both sides until done. Top with pure maple syrup. We always use pure Vermont Maple Syrup!
